Ingredients
1 (500g) packet macaroni (or other pasta such as shells or spirals)
1/2 bunch radishes, rinsed and sliced thinly
2 spring onions, trimmed and sliced including some green tops
4 stalks celery, trimmed and chopped finely
1/2 red capsicum chopped finely (optional)
1/2 cup whole egg mayonnaise
1 tsp seeded mustard
1 tab sugar
salt to taste
Method
In a small bowl or jug, mix mayonnaise, mustard and sugar
check for seasoning and add salt to taste - set aside for flavours to blend and sugar to dissolve
bring a large saucepan of lightly salted water to a boil
add the pasta and cook per instructions on the packet or until al dente
rinse in a colundar under cold water and drain - set aside
in a large bowl, combine all the ingredients together
cover and chill in the refrigerator until required.
