This spice mix is quite different to the Lebanese Seven Spice Mix but is used in a similar way. It also makes an interesting rub for BBQ meats or roasts.
To make this mix, use powdered or ground spices - see tip below for using whole spices.
Ingredients:
2 tablespoons black pepper
2 tablespoons paprika
2 tablespoons cumin
1 tablespoon coriander
1 tablespoon cloves
1 teaspoon nutmeg
1 teaspoon cinnamon
1/2 teaspoon cardamom
Method:
Mix all the spices together
Store in a screw top jar until needed.
Tips:
A more flavoursome mix is made with whole spices that you heat in a frying pan until fragrant before grinding in a mortar and pestle.
